Some of the biggest, challenges people face, when adjusting to eating gluten free, is being able to afford it! One of the ways to get over this hurdle is by eating " left-overs" . Making this simple dish, can save you some valuable time. Especially during the busy work week ahead. Now here is a tidbit for you to share with dinner guests. Did you know the word casserole is of french origin and means to cook in 1 type of dish.

Why this recipe?

This hot entree' is cost effective, @ $3.50 per serving. It's easy to make and can accommodate several types of diets. For example; low sodium, heart healthy , organic and of course, gluten free. Most importantly, you can enjoy the "left-overs" for lunch the following day!

Ingredients

1 Tbsp. organic butter

1 tsp. oregano

1 fresh green pepper-diced

1 fresh red pepper-diced

1 medium onion-diced

1 garlic clove-diced

1 Cup Fresh mushrooms-chopped

1 18oz. jar of organic tomato sauce

1 lb. venison or bison burger

1 Tbsp. Cilantro-diced ( Kitchen Tip-use scissors to cut up fresh cilantro)

4 Cups Brown Rice Elbow Pasta


In large skillet; Saute' butter, oregano, green & red peppers, garlic, onion, cilantro, and mushrooms over medium heat. Crumble burger into mixture and cook until browned. Pour jar of organic tomato sauce over burger, heat to boil, stirring occaisonally. Reduce heat, cover, and simmer 15-20 minutes. Prepare pasta according to package directions. Drain noodles, mix with meat and sauce . Serve and ENJOY a healthy , delicious entree' !
